Ingredients:

  • 1.5 lb ground beef (80/20 blend)
  • 1 medium onion, finely diced
  • 3 cloves garlic, minced
  • 1 large egg, beaten
  • 1/2 cup Panko or plain breadcrumbs
  • 2 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 2 lbs Yukon Gold potatoes, peeled and cubed
  • 4 tbsp unsalted butter
  • 1/2 cup whole milk
  • 1 1/2 cups sharp cheddar cheese, shredded
  • 1/4 tsp garlic powder

Instructions:

  1. Heat olive oil in a skillet over medium heat. Sauté onions and garlic until translucent.
  2. In a large bowl, gently combine the ground beef, sautéed onions and garlic, egg, breadcrumbs, Worcestershire sauce, salt, and pepper. Mix until just combined.
  3. Press the meat mixture evenly into the bottom of a 9x13 inch baking dish. Bake at 375°F (190°C) for 30 minutes.
  4. While the meat bakes, boil the cubed potatoes in salted water until fork-tender. Drain and mash with butter, milk, garlic powder, and 1/2 cup of the shredded cheese until smooth.
  5. Spread the mashed potatoes evenly over the pre-baked meatloaf. Sprinkle the remaining 1 cup of cheddar cheese over the top.
  6. Bake for an additional 20–25 minutes until the cheese is bubbling and golden-brown around the edges.
