Ingredients:

  • 1/2 cup (113g) unsalted butter, softened
  • 3/4 cup (150g) granulated sugar
  • 1 large egg (approx. 50g)
  • 1 tbsp (6g) fresh lemon zest
  • 2 tbsp (30ml) fresh lemon juice
  • 1 tsp (5ml) vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1 tsp (5g) baking powder
  • 1/4 tsp (1.5g) salt
  • 1/4 cup (50g) granulated sugar
  • 1/2 cup (60g) powdered sugar

Instructions:

  1. Preheat your oven to 350°F (175°C). Line your baking sheets with parchment paper so the cookies don't cling to the pan.
  2. In a large bowl, beat the softened butter and granulated sugar together until the mixture looks pale and fluffy.
  3. Add the egg, lemon zest, lemon juice, and vanilla. Beat on medium speed until the batter is smooth and smells fragrant.
  4. Sift in the flour, baking powder, and salt.
  5. Stir with a spatula or use the mixer on the lowest setting just until the white streaks of flour disappear.
  6. Use your cookie scoop to create balls of dough (about 1 tablespoon each).
  7. Roll each ball in the granulated sugar until lightly coated.
  8. Immediately roll the ball in the powdered sugar, coating it heavily so no yellow dough shows through.
  9. Place balls 2 inches apart on the prepared baking sheets.
  10. Bake for 11 minutes or until the edges are set but the centers remain soft. Allow to cool on the pan for a few minutes before transferring to a wire rack.
