Ingredients:
- 1/2 cup (113g) unsalted butter, softened
- 3/4 cup (150g) granulated sugar
- 1 large egg (approx. 50g)
- 1 tbsp (6g) fresh lemon zest
- 2 tbsp (30ml) fresh lemon juice
- 1 tsp (5ml) vanilla extract
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking powder
- 1/4 tsp (1.5g) salt
- 1/4 cup (50g) granulated sugar
- 1/2 cup (60g) powdered sugar
Instructions:
- Preheat your oven to 350°F (175°C). Line your baking sheets with parchment paper so the cookies don't cling to the pan.
- In a large bowl, beat the softened butter and granulated sugar together until the mixture looks pale and fluffy.
- Add the egg, lemon zest, lemon juice, and vanilla. Beat on medium speed until the batter is smooth and smells fragrant.
- Sift in the flour, baking powder, and salt.
- Stir with a spatula or use the mixer on the lowest setting just until the white streaks of flour disappear.
- Use your cookie scoop to create balls of dough (about 1 tablespoon each).
- Roll each ball in the granulated sugar until lightly coated.
- Immediately roll the ball in the powdered sugar, coating it heavily so no yellow dough shows through.
- Place balls 2 inches apart on the prepared baking sheets.
- Bake for 11 minutes or until the edges are set but the centers remain soft. Allow to cool on the pan for a few minutes before transferring to a wire rack.
