Ingredients:

  • 1.5 cups all-purpose flour
  • 3 tbsp granulated sugar
  • 1 tbsp baking powder
  • 0.5 tsp salt
  • 1.25 cups milk
  • 1 large egg
  • 3 tbsp unsalted butter, melted
  • 1 tsp vanilla extract

Instructions:

  1. Whisk the flour, sugar, baking powder, and salt in a large bowl.
  2. Make a well in the center of the dry ingredients. Pour in the milk, egg, melted butter, and vanilla.
  3. Whisk gently until just combined. Note: Stop when the flour streaks disappear; some lumps are a good thing.
  4. Set a skillet over medium heat.
  5. Test the heat by flicking a drop of water onto the pan. Wait until it sizzles immediately before adding grease.
  6. Lightly grease the pan with a small knob of butter or a drizzle of oil.
  7. Pour 1/4 cup of batter per pancake.
  8. Cook for 2-3 minutes. Watch for bubbles to form on top and the edges to look matte and set.
  9. Flip carefully with a spatula.
  10. Cook the second side for 1-2 minutes until it's golden brown. Remove to a plate.
