Ingredients:

  • 1.5 cups (300g) long-grain brown rice
  • 2.5 cups (600ml) low-sodium beef broth
  • 0.5 tsp (3g) sea salt
  • 1 tbsp (14g) olive oil
  • 0.33 cup (110ml) honey
  • 0.25 cup (60ml) low-sodium soy sauce
  • 3 cloves (15g) garlic, minced
  • 1 tsp (5ml) fresh ginger, grated
  • 1 tbsp (15ml) rice vinegar
  • 1 lb (450g) frozen beef meatballs
  • 2 cups (150g) frozen peas and carrots blend
  • 2 stalks (60g) green onions, thinly sliced
  • 1 tbsp (15ml) toasted sesame oil

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Grease a 9x13 inch baking dish with olive oil and spread the rinsed brown rice evenly across the bottom.
  3. Pour the beef broth and salt over the rice, ensuring it is fully submerged.
  4. In a small bowl, whisk together the honey, soy sauce, minced garlic, grated ginger, and rice vinegar until smooth.
  5. Toss the frozen meatballs in a separate bowl with half of the honey garlic glaze until well-coated.
  6. Nestle the glazed meatballs and the frozen peas and carrots into the rice and broth mixture.
  7. Drizzle the remaining honey garlic glaze evenly over the top of the meatballs.
  8. Cover the dish tightly with aluminum foil and bake for 30 minutes.
  9. Remove the foil and bake for an additional 10–15 minutes, until the rice has absorbed the liquid and meatballs are caramelized.
  10. Remove from the oven and let rest for 5 minutes. Drizzle with toasted sesame oil and garnish with sliced green onions.
