Ingredients:

  • 1/2 cup (115g) unsalted butter, softened
  • 3/4 cup (150g) granulated sugar
  • 1 large egg (50g)
  • 1 tsp (5ml) vanilla extract
  • 2 tbsp (30ml) fresh lemon juice
  • 1 tbsp (6g) lemon zest
  • 2 cups (250g) all-purpose flour
  • 1/2 tsp (3g) baking powder
  • 1/4 tsp (1.5g) salt
  • 1/4 cup (50g) granulated sugar
  • 1/2 cup (60g) powdered sugar

Instructions:

  1. Cream together the softened butter and granulated sugar using a hand mixer until the mixture is pale and fluffy (about 2-3 minutes).
  2. Beat in the egg, vanilla extract, lemon juice, and lemon zest until fully emulsified and smooth.
  3. In a separate bowl, whisk together the flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet mixture on low speed, mixing only until the white streaks of flour disappear.
  5. Flash-chill the dough for 15 minutes to firm the fats and prevent over-spreading.
  6. Scoop 1 tablespoon of dough and roll it into a tight 1-inch ball.
  7. Roll the ball first in granulated sugar until lightly coated, then roll heavily in powdered sugar until it looks like a snowball.
  8. Place balls 2 inches apart on lined sheets and bake at 350°F (175°C) for 10-12 minutes until edges are set but tops remain soft.
  9. Let cool on the pan for 5 minutes before transferring to a wire rack.
