Ingredients:
- 1/2 cup (115g) unsalted butter, softened
- 3/4 cup (150g) granulated sugar
- 1 large egg (50g)
- 1 tsp (5ml) vanilla extract
- 2 tbsp (30ml) fresh lemon juice
- 1 tbsp (6g) lemon zest
- 2 cups (250g) all-purpose flour
- 1/2 tsp (3g) baking powder
- 1/4 tsp (1.5g) salt
- 1/4 cup (50g) granulated sugar
- 1/2 cup (60g) powdered sugar
Instructions:
- Cream together the softened butter and granulated sugar using a hand mixer until the mixture is pale and fluffy (about 2-3 minutes).
- Beat in the egg, vanilla extract, lemon juice, and lemon zest until fully emulsified and smooth.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture on low speed, mixing only until the white streaks of flour disappear.
- Flash-chill the dough for 15 minutes to firm the fats and prevent over-spreading.
- Scoop 1 tablespoon of dough and roll it into a tight 1-inch ball.
- Roll the ball first in granulated sugar until lightly coated, then roll heavily in powdered sugar until it looks like a snowball.
- Place balls 2 inches apart on lined sheets and bake at 350°F (175°C) for 10-12 minutes until edges are set but tops remain soft.
- Let cool on the pan for 5 minutes before transferring to a wire rack.
