Ingredients:
- 1/2 cup (45g) old-fashioned rolled oats
- 1 tbsp (12g) chia seeds
- 2/3 cup (160ml) almond milk
- 1/4 cup (60g) Greek yogurt
- 1 tsp (5ml) vanilla extract
- 1 tbsp (15ml) maple syrup
- 1 pinch sea salt
Instructions:
- Combine the rolled oats, chia seeds, and salt in an 8 oz Mason jar or airtight glass container.
- Pour in the almond milk, Greek yogurt, vanilla extract, and maple syrup. Stir vigorously with a fork until the mixture is homogeneous and no dry pockets of oats remain.
- Let the jar sit on the counter for 10 minutes, then stir the mixture a second time to break up any chia seed clusters.
- Seal the lid tightly and refrigerate for at least 6 hours, ideally overnight (8+ hours), to allow the oats to soften and the chia seeds to bloom.
