Ingredients:

  • 1/2 cup (115g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 1 large egg
  • 1 tbsp (6g) lemon zest
  • 2 tbsp (30ml) fresh lemon juice
  • 1/2 tsp (2.5ml) vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1/2 tsp (3g) baking soda
  • 1/4 tsp (1.5g) salt
  • 1/4 cup (50g) granulated sugar
  • 1 tsp (2g) lemon zest

Instructions:

  1. Cream the softened butter and 1 cup of sugar together until the mixture looks pale and fluffy.
  2. Beat in the egg, lemon juice, lemon zest, and vanilla extract. Mix until the batter is smooth and combined.
  3. Sift in the flour, baking soda, and salt. Stir gently with a spoon or spatula just until the white streaks of flour disappear.
  4. Scoop about 1 tablespoon of dough and roll it between your palms to form a ball.
  5. Roll the ball in the lemon-sugar mixture until evenly coated. Place balls 2 inches apart on the baking sheet.
  6. Bake in a preheated oven at 350°F (175°C) for 8 to 11 minutes, until edges are barely golden and centers remain slightly soft.
  7. Let the cookies cool on the pan for 5 minutes to set before moving them to a wire rack.
