Ingredients:
- 1/2 cup (115g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 1 large egg
- 1 tbsp (6g) lemon zest
- 2 tbsp (30ml) fresh lemon juice
- 1/2 tsp (2.5ml) vanilla extract
- 2 cups (250g) all-purpose flour
- 1/2 tsp (3g) baking soda
- 1/4 tsp (1.5g) salt
- 1/4 cup (50g) granulated sugar
- 1 tsp (2g) lemon zest
Instructions:
- Cream the softened butter and 1 cup of sugar together until the mixture looks pale and fluffy.
- Beat in the egg, lemon juice, lemon zest, and vanilla extract. Mix until the batter is smooth and combined.
- Sift in the flour, baking soda, and salt. Stir gently with a spoon or spatula just until the white streaks of flour disappear.
- Scoop about 1 tablespoon of dough and roll it between your palms to form a ball.
- Roll the ball in the lemon-sugar mixture until evenly coated. Place balls 2 inches apart on the baking sheet.
- Bake in a preheated oven at 350°F (175°C) for 8 to 11 minutes, until edges are barely golden and centers remain slightly soft.
- Let the cookies cool on the pan for 5 minutes to set before moving them to a wire rack.
