Ingredients:
- 1.5 lb ground beef (80/20 lean-to-fat ratio)
- 1 cup Panko breadcrumbs
- 1/3 cup whole milk
- 1 large egg, beaten
- 1/2 cup yellow onion, finely minced
- 1/4 cup fresh parsley, chopped
- 2 cloves garlic, minced
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1/2 tsp smoked paprika
- 1/2 cup ketchup
- 1 tbsp brown sugar
- 1 tbsp Worcestershire sauce
- 1 tsp apple cider vinegar
Instructions:
- Preheat oven to 350°F (175°C).
- In a large bowl, combine the milk and breadcrumbs; let them sit for 2 minutes to soften.
- Stir in the beaten egg, minced onion, garlic, parsley, and seasonings until aromatic.
- Gently fold in the ground beef with your hands until just combined; do not over-work the meat.
- Press the mixture firmly but gently into a greased 9x5 inch loaf pan and smooth the top with a spatula.
- In a small bowl, whisk together ketchup, brown sugar, Worcestershire sauce, and apple cider vinegar to create the glaze.
- Spread half of the glaze over the top of the meatloaf.
- Bake for 40 minutes.
- Remove from the oven, apply the remaining glaze, and bake for another 15 minutes or until the internal temperature reaches 160°F (71°C).
- Let the meatloaf rest in the pan for 10 minutes before slicing.
