Ingredients:

  • 1.5 lb ground beef (80/20 lean-to-fat ratio)
  • 1 cup Panko breadcrumbs
  • 1/3 cup whole milk
  • 1 large egg, beaten
  • 1/2 cup yellow onion, finely minced
  • 1/4 cup fresh parsley, chopped
  • 2 cloves garlic, minced
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika
  • 1/2 cup ketchup
  • 1 tbsp brown sugar
  • 1 tbsp Worcestershire sauce
  • 1 tsp apple cider vinegar

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine the milk and breadcrumbs; let them sit for 2 minutes to soften.
  3. Stir in the beaten egg, minced onion, garlic, parsley, and seasonings until aromatic.
  4. Gently fold in the ground beef with your hands until just combined; do not over-work the meat.
  5. Press the mixture firmly but gently into a greased 9x5 inch loaf pan and smooth the top with a spatula.
  6. In a small bowl, whisk together ketchup, brown sugar, Worcestershire sauce, and apple cider vinegar to create the glaze.
  7. Spread half of the glaze over the top of the meatloaf.
  8. Bake for 40 minutes.
  9. Remove from the oven, apply the remaining glaze, and bake for another 15 minutes or until the internal temperature reaches 160°F (71°C).
  10. Let the meatloaf rest in the pan for 10 minutes before slicing.
