Ingredients:
- 1 lb lean ground beef (85/15)
- 0.5 lb ground pork
- 1 cup whole wheat breadcrumbs
- 1 large egg, beaten
- 1/4 cup skim milk
- 1/2 cup finely grated carrots
- 1/4 cup finely diced onion
- 2 cloves minced garlic
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1/3 cup low-sugar ketchup
- 1 tbsp honey
- 1 tsp apple cider vinegar
- 1/2 tsp smoked paprika
- 1 lb baby gold potatoes, halved
- 2 cups fresh broccoli florets
- 2 tbsp olive oil
- 1/2 tsp garlic powder
Instructions:
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine ground beef, ground pork, breadcrumbs, egg, skim milk, grated carrots, onion, garlic, salt, pepper, and thyme. Mix gently by hand until just combined.
- Line a baking sheet with parchment paper. Shape the meat mixture into 8 equal oval mini-loaves and place them on the pan.
- Toss halved baby gold potatoes with olive oil and garlic powder, then arrange them around the mini-loaves on the baking sheet.
- Bake for 15 minutes.
- Whisk together low-sugar ketchup, honey, apple cider vinegar, and smoked paprika to create the glaze.
- Remove the pan from the oven, brush the glaze onto each mini-loaf, and add the broccoli florets to the empty spaces on the pan.
- Return to the oven and bake for another 12–15 minutes until the meat reaches an internal temperature of 160°F (71°C) and potatoes are golden-brown.
