Ingredients:

  • 1 lb lean ground beef (85/15)
  • 0.5 lb ground pork
  • 1 cup whole wheat breadcrumbs
  • 1 large egg, beaten
  • 1/4 cup skim milk
  • 1/2 cup finely grated carrots
  • 1/4 cup finely diced onion
  • 2 cloves minced garlic
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1/3 cup low-sugar ketchup
  • 1 tbsp honey
  • 1 tsp apple cider vinegar
  • 1/2 tsp smoked paprika
  • 1 lb baby gold potatoes, halved
  • 2 cups fresh broccoli florets
  • 2 tbsp olive oil
  • 1/2 tsp garlic powder

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine ground beef, ground pork, breadcrumbs, egg, skim milk, grated carrots, onion, garlic, salt, pepper, and thyme. Mix gently by hand until just combined.
  3. Line a baking sheet with parchment paper. Shape the meat mixture into 8 equal oval mini-loaves and place them on the pan.
  4. Toss halved baby gold potatoes with olive oil and garlic powder, then arrange them around the mini-loaves on the baking sheet.
  5. Bake for 15 minutes.
  6. Whisk together low-sugar ketchup, honey, apple cider vinegar, and smoked paprika to create the glaze.
  7. Remove the pan from the oven, brush the glaze onto each mini-loaf, and add the broccoli florets to the empty spaces on the pan.
  8. Return to the oven and bake for another 12–15 minutes until the meat reaches an internal temperature of 160°F (71°C) and potatoes are golden-brown.
