Ingredients:

  • 2 lbs ground beef (80/20 lean-to-fat ratio)
  • 1 cup bread crumbs
  • 1/3 cup whole milk
  • 1 large egg, beaten
  • 1 small onion, finely minced
  • 3 cloves garlic, minced
  • 2 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried parsley
  • 1/2 cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp yellow mustard
  • 1 tsp apple cider vinegar

Instructions:

  1. Preheat oven to 350°F (175°C). In a small bowl, combine milk and bread crumbs and let sit for 2 minutes to form a paste.
  2. In a large bowl, combine the ground beef, milk-crumb paste, egg, minced onion, garlic, Worcestershire sauce, salt, black pepper, and dried parsley. Gently fold the ingredients together until just combined; do not over-mix.
  3. Press the mixture gently into a 9x5 inch loaf pan or shape into an oval on a rimmed baking sheet. Bake for 40 minutes.
  4. Whisk together ketchup, brown sugar, yellow mustard, and apple cider vinegar. Spread the glaze evenly over the top of the baked loaf.
  5. Return the loaf to the oven for 10-15 minutes, or until the internal temperature reaches 160°F (71°C) and the glaze is bubbling.
  6. Let the meatloaf rest for 10 minutes before slicing to retain juices.
