Ingredients:

  • 2 lbs ground beef (80/20 lean-to-fat ratio)
  • 1 cup Italian bread crumbs
  • 1/3 cup whole milk
  • 1 large egg, beaten
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 tbsp dried Italian seasoning
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 2 tbsp fresh parsley, chopped
  • 1 cup marinara sauce
  • 1 1/2 cups shredded mozzarella cheese

Instructions:

  1. In a large bowl, combine the bread crumbs and milk, letting them sit for 2-3 minutes. Stir in the beaten egg, minced garlic, diced onion, and Parmesan cheese.
  2. Add the ground beef, Italian seasoning, salt, pepper, and parsley. Use your hands to gently combine the ingredients until just incorporated; do not over-mix.
  3. Press the mixture into a 9x5 inch loaf pan or shape it into a loaf on a baking sheet. Bake at 350°F (175°C) for 45 minutes.
  4. Spread the marinara sauce evenly over the top of the loaf, then cover with shredded mozzarella. Return to the oven for 15 more minutes, or until the cheese is bubbling and golden-brown.
  5. Remove from the oven and let the loaf rest for 10 minutes to allow juices to redistribute before slicing.
