Ingredients:

  • 2 lbs lean ground beef (90/10)
  • 3/4 cup Panko breadcrumbs
  • 1 large egg, beaten
  • 1/2 cup yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp Worcestershire sauce
  • 1/2 cup ketchup
  • 1/3 cup packed light brown sugar
  • 1 tbsp apple cider vinegar
  • 1 tsp Dijon mustard

Instructions:

  1. In a large bowl, combine the lean ground beef, Panko, egg, onion, garlic, and seasonings. Gently fold the ingredients together with your hands until just combined, avoiding over-mixing.
  2. Preheat your oven to 350°F (175°C) and lightly grease a 5x9-inch loaf pan.
  3. Prepare the glaze by mixing ketchup, brown sugar, apple cider vinegar, and Dijon mustard.
  4. Spread 2 tablespoons of the prepared glaze directly onto the bottom of the loaf pan, then press the meat mixture firmly on top of this sugar layer.
  5. Spread the remaining glaze generously over the top of the meatloaf.
  6. Bake for 50–60 minutes until the edges are bubbling and the internal temperature reaches 160°F (71°C).
  7. Switch the oven to 'Broil' for the final 2–3 minutes until the glaze is thick and sticky.
