Ingredients:
- 2 lbs lean ground beef (90/10)
- 3/4 cup Panko breadcrumbs
- 1 large egg, beaten
- 1/2 cup yellow onion, finely diced
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp Worcestershire sauce
- 1/2 cup ketchup
- 1/3 cup packed light brown sugar
- 1 tbsp apple cider vinegar
- 1 tsp Dijon mustard
Instructions:
- In a large bowl, combine the lean ground beef, Panko, egg, onion, garlic, and seasonings. Gently fold the ingredients together with your hands until just combined, avoiding over-mixing.
- Preheat your oven to 350°F (175°C) and lightly grease a 5x9-inch loaf pan.
- Prepare the glaze by mixing ketchup, brown sugar, apple cider vinegar, and Dijon mustard.
- Spread 2 tablespoons of the prepared glaze directly onto the bottom of the loaf pan, then press the meat mixture firmly on top of this sugar layer.
- Spread the remaining glaze generously over the top of the meatloaf.
- Bake for 50–60 minutes until the edges are bubbling and the internal temperature reaches 160°F (71°C).
- Switch the oven to 'Broil' for the final 2–3 minutes until the glaze is thick and sticky.
