Ingredients:
- 2 lbs ground beef (80/20 blend)
- 1 cup panko
- 2 large eggs, beaten
- 1/2 cup whole milk
- 1 medium onion, finely minced
- 3 cloves garlic, minced
- 2 tbsp Worcestershire sauce
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried parsley
- 1/2 tsp paprika
- 1/2 cup ketchup
- 2 tbsp brown sugar
- 1 tbsp apple cider vinegar
- 1 tsp garlic powder
Instructions:
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the beaten eggs, milk, and Worcestershire sauce. Stir in the minced onion and garlic.
- Add the ground beef, panko, salt, black pepper, dried parsley, and paprika. Mix with your hands or a fork until just combined; do not over-knead.
- Line a rimmed baking sheet with parchment paper. Transfer the beef mixture to the center and gently shape it into an oval loaf, approximately 9x5 inches.
- Bake for 35–40 minutes until the edges just begin to brown.
- While the meat is baking, whisk together the ketchup, brown sugar, apple cider vinegar, and garlic powder in a saucepan over medium heat for 2 minutes until bubbling.
- Remove the meatloaf from the oven and generously brush the glaze over the top and sides.
- Return to the oven for another 10–15 minutes until the glaze is tacky and the internal temperature reaches 165°F (74°C).
- Let the meatloaf rest for 10 minutes before slicing to lock in the juices.
