Ingredients:

  • 2 lbs ground beef (80/20 blend)
  • 1 cup panko
  • 2 large eggs, beaten
  • 1/2 cup whole milk
  • 1 medium onion, finely minced
  • 3 cloves garlic, minced
  • 2 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried parsley
  • 1/2 tsp paprika
  • 1/2 cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp apple cider vinegar
  • 1 tsp garlic powder

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the beaten eggs, milk, and Worcestershire sauce. Stir in the minced onion and garlic.
  3. Add the ground beef, panko, salt, black pepper, dried parsley, and paprika. Mix with your hands or a fork until just combined; do not over-knead.
  4. Line a rimmed baking sheet with parchment paper. Transfer the beef mixture to the center and gently shape it into an oval loaf, approximately 9x5 inches.
  5. Bake for 35–40 minutes until the edges just begin to brown.
  6. While the meat is baking, whisk together the ketchup, brown sugar, apple cider vinegar, and garlic powder in a saucepan over medium heat for 2 minutes until bubbling.
  7. Remove the meatloaf from the oven and generously brush the glaze over the top and sides.
  8. Return to the oven for another 10–15 minutes until the glaze is tacky and the internal temperature reaches 165°F (74°C).
  9. Let the meatloaf rest for 10 minutes before slicing to lock in the juices.
