Ingredients:
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg, room temperature
- 2 tbsp fresh lemon juice
- 2 tbsp lemon zest
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp fine sea salt
- 1/4 cup granulated sugar
- 1/2 cup powdered sugar
Instructions:
- In a large bowl, beat the softened butter and 3/4 cup granulated sugar until the mixture looks pale and fluffy.
- Add the egg, lemon juice, lemon zest, and vanilla extract. Beat on medium speed until smooth and velvety.
- In a separate bowl, whisk together flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet, mixing on low speed just until no streaks of flour remain.
- Cover the bowl with plastic wrap and refrigerate for at least 2 hours.
- Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
- Use a cookie scoop to form 1-inch balls of dough.
- Roll each dough ball first in granulated sugar and then in powdered sugar to create a moisture barrier.
- Place on baking sheets and bake for 10 minutes.
