Ingredients:

  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg, room temperature
  • 2 tbsp fresh lemon juice
  • 2 tbsp lemon zest
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp fine sea salt
  • 1/4 cup granulated sugar
  • 1/2 cup powdered sugar

Instructions:

  1. In a large bowl, beat the softened butter and 3/4 cup granulated sugar until the mixture looks pale and fluffy.
  2. Add the egg, lemon juice, lemon zest, and vanilla extract. Beat on medium speed until smooth and velvety.
  3. In a separate bowl, whisk together flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet, mixing on low speed just until no streaks of flour remain.
  4. Cover the bowl with plastic wrap and refrigerate for at least 2 hours.
  5. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  6. Use a cookie scoop to form 1-inch balls of dough.
  7. Roll each dough ball first in granulated sugar and then in powdered sugar to create a moisture barrier.
  8. Place on baking sheets and bake for 10 minutes.
